The participants were welcomed in the Balsamico & Vinegar Competence Centre by the Managing Director, Mr. Theo F. Berl. This was followed by a very interesting lecture on the subject of vinegar. Mr. Berl explained to the curious audience the difference between the industrial production of vinegar and the “art of brewing” as it has been practised at Balema for generations.
